Franck Desplechin
The unexpected journey of a chef
Franck grew up in a small town in Brittany, France, the land of butter, crêpes, and very opinionated grandmothers in the kitchen. He started cooking professionally at 14 and quickly figured out that a chef’s knife could double as a passport. That knife has taken him to the Caribbean islands, Spain, Australia, French Polynesia, Hawaii, San Francisco, Sedona, and eventually to Torrington, Connecticut, where he now lives with his wife Kristin, their daughters Lorena and Camila, and Gizmo, a Siberian husky with very strong opinions of his own.
Along the way, Franck worked his way up through the kitchens of Michelin-starred restaurants and into some of the most luxurious hotels and resorts in the world, most notably with the St. Regis brand (formerly Starwood, now Marriott) and Auberge Collection. Somewhere between the plating and the pressure, he realized that the part he loved most wasn’t only the food. It was watching the young cook on the line grow into a leader.
That realization became Incrementum. Today, Franck leads a hand-picked group of 50 hospitality professionals across every discipline, from kitchens and bars to front office and rooms, helping hotels, resorts, and restaurants raise the guest experience by developing their people. He is a certified John C. Maxwell Speaker, Coach, Teacher and Trainer, a certified DISC Consultant, and the author of Relentless Growth, with his next book, Contagious Growth, on the way. He also writes the newsletter Franck-ly Speaking and has shared his story on podcasts, TV, and conference stages.
Incrementum is built on four core values: Responsibility, Patience, Commitment, and Development. Franck believes great leaders are made the same way great sauces are, slowly, with attention, one person and one teaching moment at a time.
When he’s not working, you’ll find Franck riding his motorcycle, hiking Connecticut’s trails with Kristin, the girls, and Gizmo, shooting hoops (and loudly defending the Golden State Warriors to anyone who will listen), or cooking for family and friends. He is endlessly curious, and if there’s something he doesn’t know enough about, he will find a way to learn it.

Being a Chef certainly has its challenges. Throughout my career, I …Being a Chef certainly has its challenges. Throughout my career, I have consistently encountered a shortage of staff, exceptionally long hours, and an elevated degree of stress brought on by high expectations. From a young age, I found that I thrived when challenged in this way. I enjoyed honing my skills and doing my part to ensure the team was successful. I familiarized myself with all aspects of the job so that I could step in whenever, and wherever, needed. Over time, this gave me a unique advantage, and I saw how my wealth of knowledge and self-discipline pushed my team to new heights. Moving up the ranks in various kitchens across the globe, I became more disciplined in my approach. My team and coworkers consistently referred to me as demanding, but fair. I found satisfaction sharing my methods with those who were willing to put forth the effort, and they were ultimately the ones who made me realize my leadership could extend outside of the kitchen. To them, it appeared, I had been a coach and mentor all along.
I was appointed Executive Chef of a team of sixty culinary professionals at twenty-nine years old. I was full of confidence and ready for the opportunity to make the team as successful as possible. I started building the skills of the leadership team first, so that they, too, could guide the others toward our common goal. I found that having these additional drivers by my side were crucial to the overall success of the team. Early in my career, I used to believe that nothing compared to the satisfaction of preparing a great meal for someone. Years later, I found that watching my mentees advance in their career and grow as leaders offered a different type of fulfillment. This sparked a desire in me to do something on a bigger platform; to reach more people by maximizing what they already have inside of them: Their untapped potential.
Back in May 2019, I found The John Maxwell Team. They are a group of certified coaches, trainers, speakers and professionals who offer everything from one on one coaching to group sessions and seminars. Targeting individuals, organizations and companies worldwide, they focus on both individual and collective growth with undeniable success. It was not long before I said to myself…That’s it, this is for me! John C. Maxwell is an internationally respected leadership expert, speaker, trainer, coach and author, whose philosophy is: “Everything rises and falls on leadership.” This resonated with me to the core and was what ultimately led me to enroll on the path to become a certified speaker, coach, teacher and trainer, too.
I was so excited about this new journey of self-discovery, but wondered how I would explain this seemingly new impulse to my wife, Kristin. I wanted her blessing to explore something that I had never really articulate as a life path. Several minutes into my semi-rehearsed speech, Kristin interrupted me, telling me there was no need to go on. “You should have done this years ago.” She said “ This is what you were MEANT to do!”
The content of the certification program is mind-blowing, eye opening and extremely resourceful. I was obsessed with the videos, teaching calls, lessons and the support from the Social Media community. I was energized by the online trainings with Paul Martinelli, Chris Robinson, Roddy Galbraith, Christian Simpson, Richard Mover and Mark Cole under the leadership of John C. Maxwell and felt so inspired by them. In March 2020, over 300 hours of study later, I am beyond grateful and happy to announce that I am a certified Coach, Speaker, Teacher and Trainer from The John Maxwell Team, part of the JMT DNA. Backed by a team of experts committed to the cause, I am ready to make a difference by establishing a community within organizations and inspiring the true leaders of tomorrow.
“We believe that every leader has a set of priorities that they live their life by, what they are inspired to get up in the morning and do and whenever they do that, they have fulfillment.”

Director of Training & Development
Kristin S. Desplechin
Flights, Feelings & Five-Star Service
Kristin’s first job was bussing tables at a local diner to pay for a flight to Europe – and she has been trading paychecks for plane tickets ever since. She went on to study Spanish and Psychology at an American university in Madrid before earning her Postgraduate degree in Hospitality from Les Roches Marbella.
In 2014, Kristin returned to the U.S. for an opportunity with the St. Regis in Aspen, Colorado. Starting her career young, and in a world-class luxury environment, instilled in her an unwavering commitment to delivering exceptional guest experiences. She brought this with her as she took on roles at the St. Regis San Francisco as the Director of Front Office, and eventually as the Director of Rooms at L’ Auberge de Sedona.
After the birth of her first daughter Lorena, Kristin made the decision to step away from hotel operations and focus on expanding the reach of her most popular trainings. Today, she has carved out a unique niche in the industry, blending her love of language, teaching, and leadership to inspire and develop hospitality professionals around the world. Her most recent title is Director of Training and Development overseeing several hotels across the US.
Kristin’s most requested training focuses on Emotional Intelligence, but it is her Service Recovery sessions that labelled her as “the best in the business.” Known for her incredibly realistic guest impersonations, she brings recovery scenarios to life in a way that is both memorable and practical. Her approach skips the tired clichés—no “empathy sandwiches” or cheesy acronyms—focusing instead on helping hospitality professionals confidently turn difficult guest moments into opportunities for trust, connection, and loyalty.
When not training, Kristin can be found thrifting treasures to sell on Facebook marketplace, learning French to better communicate with her in-laws, or daydreaming about the next time she sets foot on the Camino de Santiago.
Leadership & Development Coach
Caroline Copley
Big City Restaurants, Big Feelings & Better Leaders
Caroline grew up in New York City’s Greenwich Village and got her start in the city’s restaurants, where she learned quickly that the hardest part of hospitality isn’t the Friday night rush or the broken ice machine. It’s the people. It also turned out to be her favorite part, and she has been curious about what makes teams tick ever since.
Her career took her from New York to luxury hotels, independent restaurants, and hospitality destinations across the country. She opened restaurants, led large teams, and developed a knack for walking into struggling operations and steadying the ship. Along the way she noticed that most leadership problems aren’t really about schedules or systems. They’re about emotions. So she did what any curious restaurant person would do and became a certified life coach through the Jay Shetty Certification School.
Today, Caroline blends her hands-on hospitality experience with her coaching background to tackle the inner work of leadership: self-awareness, healthy boundaries, emotional regulation, and Nonviolent Communication (NVC). Her sessions help leaders handle difficult conversations, express needs without blame, and listen without getting defensive, all without letting accountability slip. The idea she loves sharing most is the difference between being responsible for people and being responsible to them, and how good boundaries actually build stronger, more trusting teams. In her world, compassion and accountability aren’t rivals. They work best together.
Caroline will be the first to tell you that the best leaders don’t have all the answers. They’re the ones willing to ask themselves the harder questions.
Now based in Ojai, California, she still works in hospitality while building leadership experiences focused on honest conversations and real personal growth. When she’s not navigating the beautiful chaos of the industry, you’ll find her creating animal portraits, soaking up time in nature, or dreaming up new ways to bring people, creativity, and personal development together.
